Mmm…pancakes!

I recently learned that the three days that precede lent are called Shrovetide and they’re all about getting in as much fun as you can before the fasting period of lent. Christians call today, the final day of Shrovetide, Shrove Tuesday and others call it Pancake Tuesday.

Games, dancing and eating breakfast for dinner; anything goes during Shrovetide! BTW, you may find it interesting to know that the word shrove comes from shrive, an older word that was common in the middle ages. Shrive means to confess which is what people who observe lent make a point of doing on Shrove Tuesday.

Here in my blog, Shrove Tuesday is a non-secular event that’s just about eating light fluffy pancakes. However, I’m willing to confess something to you right here and now: I often serve pancakes for supper.

It’s true. Pancakes are fast and easy to make and who doesn’t love them? Plus, almost everyone always has the ingredients to make pancakes in their pantry so they’re a great solution for an evening when the cupboards are bare.

Dana’s Classic Pancakes
2 cups (500 mL) all-purpose flour
1/4 cup (50 mL) granulated sugar
4 tsp (20 mL) baking powder
1/2 tsp (2 mL) salt
2 eggs, lightly beaten
2 cups (500 mL) milk
1 tsp (5 mL) vanilla
1/4 cup (50 mL) melted butter or vegetable oil

Heat a griddle or heavy skillet over medium-high heat. Preheat oven to 200F (95C). Whisk eggs, milk, vanilla and butter or oil in a large glass measuring cup or bowl. Blend the flour with the sugar, baking powder and salt. Whisking, add the dry ingredients to the wet. Stir until well combined and almost smooth.

Grease preheated griddle or pan lightly and reduce heat to medium. Spoon batter onto griddle; use the back of the spoon to spread batter into circles. Cook for 1 to 2 minutes or until bubbles begin to form in batter. Turn and cook for 1 to 2 minutes longer or until golden. Transfer to oven until all pancakes are cooked. Makes 4 servings.

Variations
Blueberry: Thaw 3/4 cup (175 mL) frozen blueberries and drain well. Sprinkle a few berries over pancake batter just after adding to griddle. Alternatively, fold the same amount of fresh wild or cultivated berries into batter.
Bacon: Stir 1/2 cup (125 mL) very finely chopped cooked bacon or ham into batter.
